Easy, Healthy, 3 Ingredient Strawberry Shortcakes

 The summer months are fast upon us and what better way to get into the spirit of the warmer months than strawberry shortcake?  Fond memories abound when thinking about this awesome dessert; some summer desserts like ice-cream can leave you feeling not so great about your-self but this dessert warrants a second opinion.  The ingredients that make this dish so awesome are also extremely light but equally satisfying at the same time and here’s why.  The three items you need to make this dish are: strawberries, angel food cake, fat-free whipped topping.  This dessert is for the more healthy conscious consumers out there because the dish is fat-free and has a serving of fruit.  If you use the fat-free or lower fat versions of the whipped topping you will also get bonus points for that as well.  The recipe is below and only takes about 10 minutes co make, so let me know what you think.

Ingredients:

  • 1 store-bought angel food cake torn up into about 1/2 to 1 inch squares
  • 1 pint of strawberries hulled and cut into thin slices
  • 1 tub of fat-free whipped topping or Reddi Whip will do

Directions:

  1. Tear up your angel food cake into 1/2 to 1 inch squares and set them in a bowl.
  2. Cut up your strawberries into thin slices, wash and dry.  Toss them into your bowl with the angel food cake.
  3. Take your whipped topping and fold in about 3/4 cup into the bowl with the cake and strawberries.
  4. Serve in individual cups or you can place the shortcake into a serving dish and people can take as much as they please.

Another variation on this dish that will make it sweeter but better would be to place about 1/4 cup of sugar in with your strawberries after you have cut and wash them.  Let the strawberries and sugar sit for about 30 minutes so that the juices pull out of the strawberries and you have a nice juice left over to pour on top of the mixture or simply fold it into the cake.
