Pleasing Vegetarian Chili For Dinner Tonight

 This could actually be on of my favorite vegetarian recipes because it doesn’t feel as though it actually is one.  Most people believe that chili without meat is not even chili, but perhaps just a glorified soup.  This recipe is very filling and satisfying at the same time.  Enjoy this for lunch or dinner.

Ingredients:

  • 1/2 cup of black beans and kidney beans (drained and rinsed)
  • 1/2 cup of tomato sauce
  • 1 cup of button mushrooms
  • 1/4 cup of corn kernels
  • 1/4 cup of chopped bell peppers
  • 1/2 tsp of the following: black pepper, cumin, cayenne, onion powder, garlic powder

Directions: 

  1. Combine all ingredients into your pot and stir
  2. Simmer with lid on for about 30 min.  Take lid off and simmer for an additional 5 min.

Many times when I make this recipe I will add some sour cream on top or some homemade cornbread mixed into it.  As I said you can add almost whatever you want to this chili, sometimes adding the faux meat crumbles is a nice touch or perhaps adding some diced butternut squash is a good idea.  Don’t limit your-self to what I have here, this is really just a platform that you can build on.
